| Maple syrup season upon us!
How sweet it is! The 2010 Maple season is underway, starting about the last week of February.
While the season has been slow so far, because of the quick swing into warmer temperatures, Mother Nature usually has a way of leveling things out. We need below freezing at night, and above freezing during the day to get the sap moving.
At Heritage Hills we practice environmentally sensitive standards, which means there is no lead solder or any non-stainless steel or food grade plastic in any of our processes. We also don't over tap our trees, and we don't use any chemicals or acids to clean our evaporators, preferring to use vinegar and a little bit of elbow grease. Also, no de-foaming agents are used, skimming the foam off with a stainless steel, mesh strainer instead.
