| Maple syrup season upon us!
How sweet it is! The 2011 Maple season is underway, starting about the last week of February. We have 500 ml and 1 Litres of Light - Grade A available in glass and plastic jugs for order.
While the season has been slow so far, because of the cooler daytime temperatures in Central Ontario quick, the forecast is for suitable day time temperatures next week with cool evenings Mother Nature usually has a way of leveling things out.
At Heritage Hills we practice environmentally sensitive standards, which means there is no lead solder or any non-stainless steel or food grade plastic in any of our processes. We also don't over tap our trees, and we don't use any chemicals or acids to clean our evaporators, preferring to use vinegar and a little bit of elbow grease. Also, no de-foaming agents are used, skimming the foam off with a stainless steel, mesh strainer instead.
